When I heard about February 10th being Cream Cheese Brownie day, I knew what I had to do…make one myself! Believe it or not I have never had a cream cheese brownie before. After reading what it was I knew I would love it. How’d I know? Because I love cream cheese frosting and fillings. Putting cream cheese on my bagel is one of my morning routines as well. Cream cheese is great and I was excited to try one of these brownies!

I knew I wanted to make the cream cheese brownies from scratch versus a box. This is just personal preference, there is something so very good about eating a brownie from scratch. Don’t get me wrong though, I will not shy away from eating box made brownies. What is your preference? Would you rather eat box brownies or homemade?

I had a vision for this dessert. After reading about what they were and searching through tons of recipes I knew adding some type of fudge would be a brilliant idea.

Once the brownies came out of the oven I ate one – well, I let it cool for about 15 minutes, but I did eat about 3 instantly. After I ate one I had to have another one, and then another one. They were just so good! I grabbed my mug and placed one brownie on the bottom and poured some fudge on it. I was able to get 3 brownies in my mug with a layer of fudge between each brownie. After tasting the brownie by itself and then with fudge I highly recommend trying it with the fudge. It brings it all to another level!

This recipe does take some time, it will take you about 1.5 hours from start to finish. The main portion of the time is spent baking the brownies. It is a fairly easy recipe to follow, you’ll just get a few (lots!) of dishes dirty. But that’s what dishwashers are for, right?

The best part about this recipe is swirling in the cream cheese! You get to create such a beautiful design by taking a butter knife and swirling it into the brownie batter. Swirl as much or as little as you’d like to get the design you like! It’ll be your great marble masterpiece!

Preheat oven to 325 degrees and adjust the oven racks to put one in the center. Grease an 8×8 pan.

Combine the unsweetened chocolate chips, semi-sweet chocolate chips, and the butter in a medium bowl. 

Place in the microwave in 15 second intervals. Every 15 seconds take the bowl out and mix contents together. Continue microwaving for 15 seconds and mixing until contents are mixed well. It should all be smooth and melted. 

Add your sugar and vanilla extract and stir until mixed well. Place the mixture in the fridge until it cools a bit. 

Once it had cooled a little, add your eggs one at a time. Stir between each egg. Stir until smooth.

In a medium bowl, add your flour, baking powder, and salt. Mix together. 

Add your chocolate mixture and mix until everything is incorporated.

To make the cream cheese filling, add cream cheese, sugar, vanilla extract, and your egg yolk in a medium sized bowl.

Beat all ingredients together until smooth and mixed evenly.

Grab your 8×8 pan and pour in half the brownie mixture. Grab a spoon and scoop 5 spoonfuls of the cream cheese mixture and place them evenly in the brownie mixture. 

Pour the other half of the brownie mixture in the pan. Spoon the remaining cream cheese mixture on the second layer of brownie batter.

With your butter knife, swirl the mixture together to give it a marble effect. Do this until it is swirled/mixed how you want it. Place your brownies in the oven. Bake for 50 minutes.

While your brownies are baking, gather all your fudge ingredients. In a medium bowl, combine your semi-sweet chocolate and condensed milk. 

Place in microwave in 15 second intervals. Take out of the microwave after 15 seconds and stir the mixture. Continue to place the mixture in the microwave for 15 seconds and stir until the mixture is smooth. Add your vanilla extract and mix together. Allow mixture to cool to room temperature. 

Once the timer on the oven goes off, stick a toothpick in the center to make sure it comes out clean. If clean, cool brownies for 15 minutes.

Cut brownies into even squares. Select your favorite 3 brownies and your favorite mug. Place a brownie in the mug, and top with fudge. Grab your second brownie and place it on top of the brownie and fudge. Dowse it in more fudge. Grab you last brownie and place it in your mug and put a little more fudge on top. Top with your favorite ingredients. I topped mine with whip cream and chopped nuts.

Making the Brownies:

1 cup semi-sweet chocolate chips

1 can sweetened condensed milk (14 oz)

1 tsp vanilla extract
